Parmesan Crusted Chicken stuffed with Prosciutto and Goat Cheese

After a long and exhausting weekend Monday strikes fast and hard. Almost out of nowhere it's upon you and never wants to let go. The last thing that I want to do is come home and make something complicated that's going to steal every last bit of energy I have left. Sometimes simple is better.

This is the one day of the week when I want to get in and out of the kitchen as quickly as possible. Go in and pull out the goods I'm making that night and prep and cook and eat. Simple and painless. I do, however, have one sticking point. I refuse to lose out on flavour while saving time. Simple and quick is great, but great taste is still paramount in my mind.


Tonight my wife wanted something healthy after a weekend filled with nothing but food. We gorged on the best food imaginable but that takes a toll on the body so the alternative is refreshing from time to time. So tonight I used up the skinless, boneless chicken breasts and decided to stuff them.

After noticing I had some leftover goat cheese from Saturday night I got to work stuffing the chicken with that and prosciutto and I figured it would still be relatively healthy and also pack in the great taste. I pounded out the chicken under plastic wrap until about half an inch thick and put a folded slice of prosciutto and a spoonful of goat cheese on top. I simply rolled the chicken and tied with kitchen twine. The rest was even less complicated. I seasoned and rolled the chicken in a flour and Parmesan mixture and seared the chicken in a hot pan with oil and butter. I finished the chicken in the oven for another 20 minutes.

The result was a caramelized exterior oozing with soft melted goat cheese and salty crisp prosciutto. The first slice into the chicken released the cheese and it came gushing out. The combination of the soft and creamy melted cheese with the chewy textured prosciutto heightened the flavour for each and every single bite. All in all it was the perfect weekday recipe to go with a light salad on the side. Tasty, refreshing and easy and everything I could ask for on a day like this.
